Chicken Cacciatore

We were thinking about eating out, and yet I always thought it might not be as good as home made meals. We only go out for Mexican food because they make the best tacos here in Southern Arizona.

This recipe is easy to make. My hubby and my daughter enjoyed it. I served the chicken cacciatore with pasta.




Chicken Cacciatore

3 chicken breast cut in half
4 roma tomatoes each cut in the 8 equals size pieces
2 garlic finely chopped
1 chopped onions
4 tbsp mascapone cheese
Olive oil for frying
handful of fresh basil
Salt & pepper

Heat the oven to 400 degrees F. Rinse the chicken breasts and pat them dry with a paper towel. Sauté the garlic & onions until translucent, then add the tomatoes, half of the fresh basil and mascapone cheese; cook about one min. Season with salt and pepper.


Heat olive oil in a frying pan and brown the chicken breasts on each side. Transfer the chicken into a baking dish/bowl. Then add the tomato mixture and bake at 400 degrees F for about 30-45 min. When its done, garnish the dish with the rest of the fresh basil. Serve with your favorite pasta.
