Gluten Free Mini Apple Pie

It was a busy day in our household yesterday. I did the laundry, baked mini apple pies and made fajitas for supper. Our plan for taking Angie for a walk at Raven Rock was cancelled, but I'm so glad that my hubby took her for a walk in our neighborhood, so I can finish baking.

I decided to make some sweet treats and completed my first attempt at making a gluten free mini apple pies and apple turnovers. They turned out delicious! Sweet and a little tart. I added some fresh squeezed lemon juice to the recipe and they were perfect with homemade whipped cream.


Preparing my ingredients


Ingredients for Fillings:

I used 4 organic Granny Apples, peeled and cut them into 1/4 inch slices.
2/3 cup sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1 teaspoon ground cinnamon

Combine all the ingredients in a glass bowl and toss them,  Cook the combine ingredients in a pot over medium heat until thicken and start to caramelize. Set aside. 

Pie Crust:

1 1/2 cups gluten free flour
1 tablespoon sweet rice flour
1 teaspoon xantham gum
1 stick butter or 1/2 cup butter
1 egg
1 tablespoon cider vinegar or 1 tablespoon of fresh lemon juice

Method:

I used a food processor to mix all the pie crust ingredients until the dough formed and refrigerate until very cold; about 45 minutes.

Set the temperature of the oven at 350° F. while making the turnover apple pies.

To make the turn overs, take the dough out and divide it into sections the right size for the rolled out pie crust you will use for your turnovers and mini pies. Roll each piece on floured surface to create the pie crust discs and spoon the apple mixture on one half of the crust discs. Fold the crust over the apple mixture and pinch the edges together with the ends of a fork.

To make the mini pies, spoon the apple mixture into the center of the crust disc and lift the edges up, pinching them together where the edges meet so the crust retains a bowl like shape.

Arrange each turnover and/or mini pie on a cookie pan with parchment paper.

Bake in a preheated 350° F oven for 30 minutes or until crust is light brown.

After baking for 30 minutes, let it cool.



This recipe is one of my experiments in the kitchen, and for a gluten free pie crust, it tasted great!

Afternoon treats with green tea.


I whipped 1 cup of heavy cream with a hand mixer and gradually add about one tablespoon of sugar while whipping, until it formed into a nice fluffy whipping cream. Add a dollop of homemade whipping cream to your apple treats and enjoy!
