Watermelon Mojito


 I like to create something new especially during the summer. My favorite cocktail drink is Mojito. Mojito is a traditonal Cuban cocktail drink. I enjoy the combination of the sweetness and citrus of mojito, and yet adding watermelon is a refreshing treat for me.


Mint syrup:

1 cup of water
1 cup of sugar
handful of mint leaves (about 20 leaves)


Mix all the ingredients together in a saucepan, heat until the sugar dissolved.  Removed the mixture from the heat, then strain out the mint leaves. Store the liquid in the fridge. The result is mint syrup.


Watermelon Mojito

1. 1 cup of cubed watermelon; pureed, strained, watermelon juice set aside, and keep 1/4 cup of the watermelon pulps (optional).
2. Pour 1 1/2 ounces Bacardi and 2 tbsp of the mint syrup described above into a tall glass.
3. Add a handful of mint leaves and muddle it together, then add the juice of the watermelon, and little bit of the watermelon pulps (optional).
4. Add crushed ice.
5. Squezze half a lime.
6. Add a splash of club soda and stir. Garnish with mint sprigs and slice of lime.
