Pineapple BBQ



Several years ago we went to dinner at the Brazilian BBQ restaurant at the Imperial Palace Casino in Biloxi, MS. Our dinner consisted of several entrées that our servers were bringing to us. I wish I could remember them all, but I do remember the pineapple BBQ skewers that they brought us as part of the dinner meal. I remembered the spices that were coated over the pineapple and I jotted them down as soon as we returned home. Later, in the summer when we had a BBQ, I included the pineapple skewers as a part of the meal. It was a hit in my household.



6 slices of fresh pineapple
6 bamboo skewers (soaked overnight in water)
1/2 cup of brown sugar
1/3 cup ground cinnamon
1/2 teaspoon nutmeg (optional)

Charcoal is ready. Mix brown sugar, cinnamon and nutmeg in a plate. Coated the pineapple in the mixture. Grill them until caramelize. Serve them hot or cold.
