Mung Beans with Clams in Coconut Milk


I was experimenting in my kitchen & had no idea how it was going to turn out but it turned out delicious.

1 cup cooked mung beans
1/2 cup onions finely chopped
1 clove garlic, minced
1 tbsp ginger root minced
1 tsp chili peppers
8 0z coconut milk
1/2 cup clam juice
1 tbsp soy sauce
1 cup of organic pea shoots
2 cups frozen clams
1 tbsp olive oil
1 tbsp fish sauce
Pinch of Kosher salt





Saute garlic, onions and ginger in olive oil. When translucent add cooked mung beans, chili peppers, clam juice and clams,  season with a pinch of sea salt. Simmer on low heat for 10 minutes. Add the coconut milk, and soy sauce. Boil for 5 minutes. Add the organic pea shoot and fish sauce to taste. Remove from heat. Enjoy!
