Salmon with Spicy Thai Sauce

When I cook salmon fillets, I like to grill, broil or fry them, then top them with butter garlicky spinach. Well, lately I got tired of eating salmon with butter sauce or just plain grilled salmon. So, this time I experimented and put some spice into the salmon. It turned out great! The Thai spicy sauce puts some zing into the salmon nuggets.

1 lb salmon fillets nuggets
Olive oil for frying
2 tbsp flour
1 tsp cornflour
Salt & pepper

Marinate Sauce

1 tsp caster sugar
1 tsp dry white cooking wine
1 tsp rice wine
2 tsp soy sauce

Spicy Sauce

2 tbsp soy sauce
2 tbsp rice vinegar
1 tbsp sugar
2 red chillies, thinly sliced
1 spring onion, thinly sliced

Marinate Sauce

Mix together the sugar, white wine, rice wine and soy sauce, stirring until the sugar dissolves. Put the salmon nuggets on a plate then pour over the marinate sauce and refirgerate for 10-15 mins.

Heat the olive oil in a frying pan. Mix the flour, cornflour, salt & pepper in a bowl. Dredge the salmon nuggets into the flour, then add the salmon in the preheated frying pan.

Cook each nuggets for 3-4 mins.

Spicy Sauce

Combine the soy sauce, vinegar and sugar in a small saucepan, cook for 5 mins. Remove from the heat, add the chillies and spring onion. Pour it over on top of the cooked salmon nuggets with cooked rice.

Enjoy!
