Halibut with Caper and Butter Sauce


Another day another recipe to share. This recipe came from the BBC Good Food website that I found while searching for a halibut recipe. The original recipe used mashed potato as side dish, but since I was out of potatoes I used cooked rice. It turned out delicious! Also, you may omit the lemon juice according to your taste.

Ingredients

2 tbsp butter , plus extra
a small bunch parsley , chopped
4 skinless pieces halibut fillet
olive oil
Kosher salt & pepper

Sauce:

1 tbsp white wine vinegar
3 tbsp white wine
2 shallots , finely chopped
1 stick unsalted butter , chilled and cubed
1 tbsp capers
1 tsp lemon juice

cooked rice


Heat the white wine vinegar and wine in a pan with the shallots, until the liquid has been decrease to 1 tbsp then gradually whisk in the butter & lemon over a low heat until you have a smooth sauce. Stir in the capers and keep warm.

Heat a little oil and a knob of butter in a non-stick frying pan, Season the halibut with kosher salt & pepper, then add the halibut pieces. Cook for 3 minutes until slightly golden then turn over and continue to cook for another couple of minutes.

Serve the halibut on a bed of cooked rice with the sauce spooned over.
