Raspberry Cream Cake



Here is another great recipe I came across, but I changed some of the ingredients & cooking method to suit my taste. The cake turned out delicious & moist! It was a big treat for the family. My daughter had 3 helpings of the cake. The recipe is not so difficult, but using a kitchen aid mixer will make it a lot easier. If you decide to give this recipe a try,  make sure to gradually add the eggs last when mixing the cake ingredients. I used vanilla sugar for dusting.


Ingredients

For the cake:

1 cup caster sugar
8oz softened butter
4 eggs , beaten
1 cup cake flour
1 tsp baking powder
Vanilla sugar or icing sugar , to decorate

For the syrup

1/2 cup caster sugar
1/4 cup sangria (real sangria by cruz garcia)
1 tsp almond extract

For the filling

1 cup heavy cream, whipped
1 cup mascarpone
3 tbsp caster sugar
1 pint of raspberries

Preparation and cooking times
Prep 45 mins

Heat oven to 350 degrees F. Butter 2 8x2 inches round cake and line each with a circle of baking parchment. In a large bowl, beat together all the cake ingredients until you have a smooth, soft mixture. Spoon the mixture equally into the two tins, smoothing over the top of each with the back of the spoon. Bake in the oven for 20 mins or until golden brown.Turn the cakes onto a cooling rack.

For the syrup, in a saucepan mix sugar, water, sangria & almond extract  together. Heat  until the sugar has dissolved. Leave to cool, about 10 mins.  Brush the syrup all over all 2 pieces of cake with a pastry brush.

For the filling, whip the cream until it forms soft peaks. Beat the mascarpone and caster sugar in a large bowl to loosen, then fold in the cream and mix together until smooth.

Spoon the cream mixture over one of the cakes. Scatter the berries over the layer, then sandwich over the other cake. Gently press down, then wrap tightly with the saran plastic wrap and leave in the fridge overnight. Dust with vanilla sugar before serving.

Garnish with berries and the syrup (optional).
